If you are looking for a pillowy soft chocolate cookie, then this might be the right fit for you. It has the taste of a brownie, chocolate chip cookie, and a chocolate cookie. It was designed to used half a bag of Trader Joe's White Chocolate Baking Chips. This recipe can be doubled to yield 30 generously sized cookies.

Instructions
Preheat oven to 325F
Melt butter in a covered bowl in the microwave. I found 45 seconds to be about the right amount of time. You only want it melted and not bubbling.
Add both sugars and melted butter and combine in a mixing bowl. I used an electric mixer to make this. To me, it wasn't worth dirtying my Kitchenaid stand mixer.
Once butter and sugars are combined add egg and vanilla and mix until just incorporated. Please don't over mix.
Add flour, cocoa powder, baking powder, and salt into the bowl and mix until it forms a dough. Once again, please don't over mix. Just mix long enough so the ingredients are combined, form a dough, and there is no dry ingredients up the sides of your mixing bowl.
Add chocolate chips and combine.
With a medium cookie scoop (or roll in your hands) place cookies on cookie sheet lined with parchment or a silpat. You should get about 15 cookies. These cookies will spread slightly, so please leave about 1-2" between each row.
Bake for 9-12 minutes. They key here is to not over bake them. Chocolate cookies are a bit tough to tell when they are done. When in doubt, stop at the 12 minute mark.
Allow to sit and cool on cookie sheet for about 30 minutes to both cool and become more solid. If you rush this and place them on a cooling rack you'll have a mess.
