BACON JERKY

Bacon Jerky is the low and slow variation of Candied Bacon. It is  cooked slowly to render the fat and ensure a nice chewy texture. This Bacon Jerky recipe uses three ingredients: spicy sriracha, maple syrup, and of course bacon to deliver delicious flavor that is bite sized and snackable.

Let bacon come to room temperature and slice in half.

Place bacon on a cookie sheet with cooling rack over it. Brush on the sauce.

Cook the bacon in oven for 2.5 hours until bacon has rendered much of its fat and achieves your desired texture.

Elevating the bacon above the cookie sheet is essential to ensure the fat has room to escape and that heat can evenly circulate around the bacon.

Use regular cut bacon, not thick cut bacon as you want the meat to dehydrate.

You can cut the recipe in half and store the bacon in your refrigerator until you are ready to prepare it.
