Trader Joe's Roasted Rainbow Potatoes

The pros:  Trader Joe's Roasted Rainbow Potatoes make for a beautiful presentation for those who don't have the time to do the prep work.

The cons:  This is a seasonal item. Does not come in a resealable bag.

The verdict:  Trader Joe's seems to be doing a bit of an overhaul on it's freezer finds. I've found a lot of new items that weren't featured in the fearless flyer. However, my receipt was marked "HOL" for this item which means that it is a seasonal find.

Now Trader Joe's recently came out with the Hasselback Potato, which is really just a sliced baked potato for those who are too lazy to take a knife and cut it in a fancy shape. These follow a slightly different formula with a much higher degree of success. First of all, you are getting three different varieties of potatoes: yellow, red, and purple.

Each one is slices at a different width to ensure even cooking times. These are also coated in a frozen oil and a spice mixture to minimize any prep work you might need to do. Out of the oven, these were all perfectly cooked in about 20 minutes. If I wanted them darker, I could have left them in there a bit longer for the flavors and colors to become more intense. These had enough oil to allow them to brown and enough spice to enhance, but not overwhelm. Rosemary has the greatest possibility of overwhelming a dish, but it does not do so here.

For $2.99 this is more expensive than buying a pound of potatoes. However, here you are paying for how easy it is. For those of us in a smaller households, I would never make three different roasted potatoes for just my husband and I. With some knife skills and a bit of prep work, this can be replicated at home, but if you would rather your side to dinner be ready in 20 minutes than this is a good find.

Would I buy this again? Yes, I picked up a few bags of Trader Joe's Roasted Rainbow Potatoes to keep in my freezer if I have dinner plans where I feel like being fancy.
