    Just used it in pancakes - was skeptical, but they came out wonderful! Didn't use the TJ's pancake mix, but rather plain old Bisquick. They were so good we could have eaten them plain, but a little fruit jam or syrup was great, too. However, we did not notice any lemon rind, zest or peel in the TJ's lemon ricotta cheese - it was very creamy. Wasn't sure if we should include the brown skin around it but we did, and it just melted away, too. Thanks for the suggestion.

    I make this Italian cheesecake at least once a year. I dont like graham cracker crust so this does it for me. It's a cake, not meant for a cheese board. 🙁

    I have an extremely limited diet thanks to allergies. Being a full time college student in the later years of life for the second time, this delicacy came out just at the beginning of finals week. I absolutely love it! When it comes to cheese, I go into tasting with no expectations. Whole foods sold a Lavendar/Espresso Asiago that was Amazing! If one looks at TJ's Baked Lemon Ricotta as a treat much like a light cheesecake, perhaps adding it to a carb filled meal wouldn't be necessary. The pancakes do sound wonderful and I will try them someday when I have time to cook a bigger meal than crockpot oatmeal, I do strongly encourage those who had expectations to put on a different lense and give this delightul treat another try next holiday season. Heather, I've been looking for a recipe. Is it on here?
