Trader Joe's Salmon and Vegetable Croquettes

Why have food when you can have "superfoods?" Yes, Trader Joe's Salmon and Vegetable Croquettes have all the buzzwords for super foods: Salmon, edamame, chia seeds, kale and broccoli. But...

The Pros:  Tasty, healthy option with lots of "superfoods." Expect even ratio of salmon to veggies.

The Cons: Only 4 come in a package. If you are expecting it to be salmon heavy you are wrong. Small croquettes, I polished off all 4 in a sitting. Sorry not sorry.

The Verdict:  Delicious. Would buy again. You'll also want to make sure you have a lemon to squeeze on this. This dish calls out for an acid.

For $4.99 it's a good, but not great value. I would have never thought that edamame and salmon (or kale or broccoli for that matter) would go together cohesively in a nice little cake. It added a much welcomed texture to the cake, an unexpected crunch that was refreshing. The chia seeds you won't even notice as they are more of a binding ingredient than anything else. The kale and broccoli were presented but not overwhelming, which is a good thing. Would I buy this again? Certainly, but I'll have to get a few. I literally ate all 4 with my salad. Again, keep a lemon handy, you'll appreciate the bit of extra acid.

    These look good! I love making my own, but it's never as cheap as these as salmon is pricey!

    These are addicting! Especially if you are an Asian food lover like I am! Have to have them at least once a week! very filling with a salad. Quick and easy to prepare.
