I think it would! Trader Joe's is confusing because some things are clearly labeled and some are not. But I saw nothing on the ingredients that alarmed me. You could always say something like, "the box does not say vegan, but the ingredients appear to be."

Dag, I too cannot stand mushrooms, but these are yummy and pretty idiot-proof to prepare in the toaster oven (I did 400 for 20 minutes). I don't think they are mushroom-y in taste nor in texture.
