You know that moment when you want to love something because it just screams "summer treat"? Yeah, that was me with Trader Joe's Hard Top Chocolate Shell Topping. We're deep into ice cream season, and I had high hopes for this being a Magic Shell dupe. Spoiler alert: it was less "magic" and more "why did I do this to my sundae?"

Trader Joe's Hard Top Chocolate Shell Topping comes in a squeezable bottle and is designed to harden into a crunchy shell the second it hits cold ice cream. Retailing for a few bucks, it's supposed to be an easy way to add that nostalgic chocolate crackle we all grew up with. Think Magic Shell, but make it Trader Joe's.

Before getting into the product I had to battle with the golden top. That should have been my warning that there would be difficulty ahead.

Let's just get this out of the way: this stuff was thick. Not rich and indulgent thick. More like "won't budge from the bottle no matter how much I shake, squeeze, or warm it up" thick.

When I first tried to open it, it was already a hassle. I figured it just needed a little warmth, so I ran the bottle under hot water. Still, it oozed out in the most unappetizing blob imaginable. And keep in mind, it was 80 degrees out the day I shot the photos, so the weather wasn't the issue.

Once I managed to wrangle some out onto my scoop of vanilla, it did eventually harden into "a shell." But the consistency was so dense that instead of a crisp, satisfying crack, it gave more "mudslide" vibes. To be blunt: it looked like someone plopped chocolate play-dough on my dessert.

The flavor wasn't terrible. It was basic semi-sweet chocolate, nothing offensive, but also nothing that makes me want to buy it again. Texture and usability really tanked the experience for me. This was less ice cream magic and more sundae sabotage.

How to Use

  • Don't even think about storing it in a cold pantry
  • In theory: squeeze over ice cream and let it harden into a chocolate shell
  • In reality: warm the bottle a lot, then pray it actually flows

    Yes, it was a little difficult to open, at first and when I shook the bottle, nothing happened. Then I read the directions which suggested to set the bottle in hot tap water. I ran the water until it was hot, filled a large glass and set the bottle inside. I waited 10 minutes and when I removed the bottle and shook it, it was liquid. I squeezed it over the top of my scoops of ice cream and it poured out nicely, quite thin and hardened by the time I put the bottle down and grabbed my spoon. It was delightful. I think maybe you should try this again warming the bottle in hot water and see if you don't also enjoy it as much as I did.

      Be sure that you use a tall glass so the bottle is submerged all the way up to the edge of the cap, so the entire product inside gets warmed up. I hope you will try this.
