Behold, the glow-up you needed if you are making a cake. If you've only ever made a cake from a box, and are used to the ones that you can get in the grocery store for 4/$5, then consider this the more adult cake that might be worth the splurge at nearly $3 a box.

The taste

So if you've ever had Duncan Hines, Pillsbury, or Betty Crocker cake mixes then you might be familiar with what you might think is vanilla. Odds are there if you look through the ingredients you'll see something called vanillin. It's not real vanilla.

Bake Trader Joe's Vanilla Cake and Baking Mix into a cake or cupcakes and you'll have something that tastes very different. It tastes far more adult than the other mixes. It's a happy place between familiar and bakery style.

Yes, visually you'll be able to see the vanilla bean specks once the liquid is added to this. They become even more prominent once you bake this up.

The only problem with those bean specks is that they give you the visual cue that this will be packed with vanilla flavor. Also, the box hints at natural vanilla flavoring. However, those specks are more for aesthetic purposes than actual flavor.

But the flavoring comes in the form of the last item in the ingredients. So yes, visually the cues are there. But when you bite into your homemade masterpiece you'll be hit with a flavor profile that is anything but those other grocery brands.

The cake itself cooked up nice and soft and pillowy provided you didn't over stir the ingredients. My cake came together in about 15 stirs. The cooking directions were spot on. Any longer and the top of the cupcakes I made would have turned browner. Not a deal-breaker, just not as pretty to look at.

My mix made about 14 cupcakes in total. If you buy Trader Joe's Vanilla Buttercream Frosting mix that will have no problems covering this mix as well. So it will actually be an even 1:1 buying ratio if you are looking to go that way.

And yes, these two items are an awesome pairing together. They do complement each other without overwhelming each other. But at the end of the day, one does look distinctly more vanilla than the other. Tastewise, yes the cake carries more vanilla flavor as well.

The packaging is pretty standard for a cake mix. It comes in a box. Inside the box is a bag with the mix in it. Could the box possibly be eliminated? If they could get the directions on a bag I don't see why not down the road.

    I am a baker and was not at all impressed with TJ's vanilla baking mix. It is very easy to bake from scratch. On occasion, I have used Duncan Hines baking mixes, but always doctor them up with substitutions, like butter instead of oil. I always add my own flavorings, vanilla paste or almond extract. On sale, for $1.00 it is a better alternative. I looked at the buttercream box, and for over $3.00, you are basically just paying for confectioner's sugar and not much else.

    I have baked with both the Trader Joe’s Vanilla cake mix and the Duncan Hines, and find that if you follow the TJ’s instructions and add real butter and milk to the Duncan Hines mix as well as some good quality vanilla extract, you get very similar results at a lower price.

    I totally agree with you. You can often buy the DH mix on sale for $1.00, and I see not advantage to the TJ's mix or the vanilla frosting mix which contains mostly Confectioners sugar. Quite a few commercial bakeries use the DH mix as well.

    I don’t think it’s fair to compare TJ’s mix to Duncan Hines. Generally speaking, TJ’s claims to source higher quality ingredients than industrial cake mixes. It’s probably better to compare to King Arthur brand mixes, 365, or organic mixes. The target buyer is someone who is used to from-scratch baking and taste. In that case, with the addition of a tsp or 2 of vanilla extract, lemon or orange zest, you have a sophisticated and delish cake you can serve on special occasions or when you don’t feel baking from scratch. I just used this cake and the TJ buttercream to make a strawberry and cream birthday cake (added 1/2c jam to the frosting) with a layer of fresh strawberries. Lovely all around and I would totally make it again.

    I did write this, but last night I had the occasion to actually use the vanilla cake mix that was tucked away at the back of my pantry. I have to say I was really impressed with the taste and texture of the cupcakes which I whipped up in just a few minutes. I have done a complete turnaround and would definitely keep a box in the house, but I’m not sure if they still sell this particular one.

    My Friend made a dessert using TJ Vanilla Cake Mix. It was so delicious that I asked her for the recipe. That is how much it tasted homemade. She made me promise not to tell it was TJ. I am sold and it was good enough to make my dessert table.
