Is there anything that says summer more than peaches? Wonderful on their own, they can be even better if you follow the recipe below.
This recipe can be eaten alone or with something like ice cream. Or as a topping to waffles. Could this be enjoyed over pancakes? Yes indeed.
Adapted from Sur La Table class
For the Peaches:
1 cup of semi sweet or sweet white wine or sparkling white wine.
1 ½ cups of sugar
1 ½ cups of water
1 pinch of salt
4 Fresh & ripe but not overripe peaches (no peaches from the freezer or a can will work)
Betty Twist:Â Herb of your choice can be added at the end: basil, mint, tarragon, or thyme all compliment the flavor of peaches. Be sure to chiffonade or cut finely where you can.
Directions:
- Cut peaches (peeling not necessary) *please make sure you peaches are washed thoroughly. Some peaches sold in larger quantities will warn you of various items added like wax or worse anti-fungicide. All the more reason to give them a good washing.
- Put wine, sugar, water, and salt in a saucepan and make a simple syrup. There should be no sugar granules visible.
Not simple syrup yet. See the difference? That is simple syrup. - Add peaches and let liquid reduce by half.
- Set aside
- Enjoy as a dessert or a breakfast, warm or cold.
