The pros:Â Trader Joe's Buttermilk Pancake and All Purpose Baking Mix works well for pancakes and waffles and is priced right.
The cons: Nothing really stands out.
The verdict: Â In my household we have the following truth: any day where you aren't eating breakfast in a rush (or over the sink) in an effort to get out of the house quickly is a good day.
If I had to chose one meal that I enjoy the most it might just be breakfast. But sadly, it is one of the most neglected. Usually I make some type of smoothie before walking out the door at 6:30am.
It's not that I don't want to enjoy breakfast, but I'm out of the house early. Up until fairly recently it is dark when I leave for work. Besides, the voices in my head remind me to hit the snooze button just one more time before committing to getting out of bed.
So during the weekends, this mix tends to come out. I can say I've only tried it a few different ways: pancakes and waffles mostly. There are no shortage of other recipes on the box. Odds are this product is made specifically for pancakes and waffles.
Besides, that is how I enjoy this most of the time. Think of this product as Trader Joe's answer to Bisquick. A handful of measuring devices, a few simple ingredients, and breakfast is all but ready. It dirties far few measuring cups and spoons than making things from scratch. Let's face it, most people enjoy the cooking and eating aspect and not the cleaning of the kitchen afterwards. Myself included.
So, as pancakes these make a decent bunch. You might need to adjust how much liquid you put in depending on how thick or thin you like your pancakes. As for waffles, they were good too. The edges were crispy enough. And let me face another truth behind this product: odds are you will be adding some type of topping to your waffles or pancakes which means you might not be tasting this as much.
This will make as good of pancakes or waffles as my well loved copies of Betty Crocker or Better Homes Cookbooks. For $1.99 you get an all around good mix. It's nothing that will ever compare to a Sunday Brunch at a nice restaurant, but it's also priced far lower too.
