Review

Trader Joe's Gluten-Free Pumpkin Pancake Mix is a seasonal treat that transforms your kitchen into a pumpkin spice wonderland. It's a blend of rice flour, potato starch, and real pumpkin flakes that creates a smooth batter that's as inviting as it is vibrant. The aroma alone is enough to make you want to throw on a chunky sweater and light a candle.

The second I opened the dry mix, I was hit with that warm, cozy pumpkin spice scent that basically screams fall. Mixing the batter was a breeze. I added eggs, melted butter, and water, and ended up with a silky orange batter that smelled like autumn in a bowl.

Once these pancakes hit the griddle, my kitchen smelled like a coffee shop in the best way possible. They cooked up perfectly with golden brown edges and a fluffy interior that flipped like a dream. First bite? Soft, tender, and packed with all the best parts of pumpkin spice-think cinnamon, nutmeg, and a touch of ginger, but nothing overpowering. The pumpkin flavor is present, but it's not like eating a pumpkin pie for breakfast.

What surprised me most was the texture. Let's face it, gluten-free pancakes can sometimes be gritty or dry. Not these. They were airy and light, with just enough moisture to make each bite a total delight. I was already dreaming up toppings: maple syrup, whipped cream, maybe even a drizzle of caramel for a little extra fun. It doesn't get the same crispness as a regular pancake, but if you can't have gluten these are a solid choice.

One heads-up: this mix contains buttermilk powder, so it's not dairy-free. But for everyone else, it's a solid seasonal option that can easily find a place in your pantry.

I need to eat gluten free, and I love this product! I add a small amount of unsweetened dried coconut, and s little extra water. This adds some chewiness that gluten free products often don’t have. They make excellent waffles. I usually add a tad more butter if I’m making waffles
