Arugula Pesto

A finished pesto with parsley and almonds surrounding it.

This peppery Arugula Pesto recipe deviates from the classic pesto with the substitution of arugula for basil and almonds in place of pine nuts. The result is just as tasty, but a bright green color and peppery in taste. This recipe is also gluten-free, low-carb, and keto-friendly. With one substitution, this recipe can also be made vegan.

I am always amazed that some people can be healthy enough to bring a salad to work for lunch each day. I can do it maybe once a week. After that, I feel like I am eating rabbit food.

My solution to enjoying my greens? I prefer pesto. That isn't to say I don't enjoy salad. I like a mouthful of all the flavors.

It's a lot of the components of salad, put into a beautiful green paste. The paste is deeply flavorful, plus it will fill you in a way that a salad just won't.

How to enjoy this is up to you: pasta, zoodles, with veggies, or on a cracker with some cheese. This recipe is peppery and bright in flavor. If you find basil pesto to be overwhelming, give this recipe a try.

How to modify this

  • If you are vegan, omit the cheese or use Nutritional Yeast or another vegan substitute
  • If you are on a low carb or keto diet, enjoy this with cheese or zucchini noodles. A pesto sauce is usually high in fat, but they are the "good fats" to have.
  • If you are gluten-free double-check all the ingredients to make sure they are gluten-free. Unfortunately with buying various products, there is always the possibility of cross-contamination. Check packages to be certain.

Tips on making this

  • Be sure to use the pulse feature of your food processor to control the texture. You'll probably have to stop and scrape down the sides with a spatula to get this mixture as it contains quite a bit of green.
  • If you are making pasta to serve with this, reserve some of the pasta water to create a creamier sauce.
  • If you are having pasta with this, then consider a "rigate" variety. It means ridge, so it will hold on to a sauce better than a smooth shaped pasta.
  • I prefer blanched almonds that do not have the skin attached to them.
  • Mix this in right before serving. This sauce is best enjoyed freshly mixed in.
  • If you have leftover pesto, store it separately. This will keep the greens fresher tasting.
  • This will last in the refrigerator for about 3 days.

Directions

Step 1: Get all of your ingredients measured. Zest and juice the lemon.

Step 2: Add the arugula, parsley, almonds, garlic cloves to the food processor. Pulse to combine. Scrape the sides of the bowl and keep adding greens until you get them all in. You may need to work in batches.

Step 3: Season pesto. If it tastes flat, consider adding more vinegar or lemon juice if you have. If not, figure out a way to enjoy this.

Step 4: Enjoy with zucchini noodles, pasta, on a cracker or with parmesan cheese. I opted for pasta, but feel free to pair this with what you like. A protein would compliment this meal or enjoy it without one as it is very filling.

Ingredients

  • 2 cloves garlic
  • ¾ cup almonds I prefer blanched and toasted.
  • 7 ounces arugula I used one 7 ounce bag of baby arugula.
  • 1 bunch parsley washed, stems removed
  • â…“ cup extra virgin olive oil
  • â…“ cup parmesan cheese
  • ¼ cup red wine vinegar
  • 1 lemon zested & juiced
  • salt & pepper to taste

Instructions

  • In a food processor add garlic, almonds, half of the arugula, and parsley and pulse. Since these items are bulky, scrape down the sides.
  • Add remaining arugula, olive oil, parmesan cheese, vinegar, lemon zest, lemon juice, and pulse until it comes a mostly smooth paste.
  • Taste. Season with salt and pepper. If this tastes flat and salt and pepper aren't fixing it, then add more vinegar or lemon juice until you enjoy the brightness of this pesto.

A bagel and a schmear. As a lifelong New Yorker, I'm pretty sure there is a certain amount of Yiddish that has been added infused into the local lexicon. And when it comes to bagels there is a reason for this.

While so many people enjoy a low-carb diet, there are certain quintessential New York foodie items that we have mastered. Pizza and bagels immediately come to mind. It doesn't matter where you travel, they're never quite the same when you go elsewhere.

So back to this schmear business. Up until now, you had some options at Trader Joe's if you want something on your bagel (or another food item), you had whipped, regular, vegan, and the seasonal pumpkin cream cheese. But now, you are getting a tub of cream cheese that is heavily infused with the flavors of onion and chive.

Onion and chive might not jive with everyone but is a common bagel store item. It naturally pairs with the other item that you'll find on a New York bagel: lox.

Unlike what you get at a bagel store, this relies on dried herbs that are mildly rehydrated by placing them into this cream cheese spread. They don't have much texture, but they were heavy-handed in adding them here.

Right off the bat, I was a bit concerned with how my tub handled itself in the refrigerator. Mine developed an air pocket which made me wonder if the contents inside were any good. The foil was inflated like a mylar balloon, which had me wondering.

I did what was natural: I went for the sniff test. Nothing seemed off.

Here you end up with a thick cream cheese that doesn't shy away from the flavor of chives or raw onion. There are even hints of garlic.

But mine was acidic tasting, perhaps the copious amounts of onion and chive also contributed to this.

If I can say anything about this product is that the words onion and chive are in big letters because they used such a healthy quantity in this.

Overall

Would I buy this again? For $1.99 it's cheap enough to try. And while it wasn't bad, I'm still waiting to see my personal favorite cream cheese appear: strawberry cream cheese. But we will have to wait and see on that. So far, Trader Joe's has only graced us with the summer seasonal Peaches and Cream Cream Cheese.

Finally. Something that can be considered real food. An actual meal. The past month, all the new items that have landed in-store have been more or less junk food. I've had enough of cookies and sweets for a bit. Well, if it weren't for one last lap around the store, I would have missed these. These are the newest addition to the fresh pasta aisle since the addition of the Italian Sausage and Four Cheese Ravioli.

Taste and review

Now, I've tried and reviewed just about all of the fresh pasta in the refrigerated case. There are very few I don't like. Some could be better. Some really stand out.

This one here stands out.

Yes, you have your standard fresh pasta. This is no different. It has two different stripes on it. One is a bright yellow on top, but on the bottom is a green stripe. Odds are it's a subtle nod to the filling: the poblano pepper.

Now, this ends up tasting like a bit of a mash-up of flavors.

While part of this is distinctly Italian, the poblano peppers add an enchilada flare to this item.

After cooking this the quick 5 minutes and allowing it to cool (which brings the filling to a more enjoyable state), it reminded me of a different product: Trader Joe's Chicken Enchiladas Verdes.

There was something smokey, peppery, with a super mild heat to this. The chicken is chopped very small, so don't expect huge chunks of chicken when you bite into this. Nope, it blends right into the filling. I didn't mind it, but I know some would enjoy those big chunks of chicken.

But with the added meat, I wasn't left feeling hungry afterwards. Unless you are sharing, you might not even want meatballs to go with this one.

Now, I know the next question: What sauce should I pair with this?  While I enjoyed mine with olive oil, I think you'll have to taste and see. I think this has the potential to be a split decision between traditional pasta sauces or even a bit of enchilada sauce with this one.

For $3.69 these are reasonably priced. And while it said 2 servings, I might have enjoyed this as just a single serving.

Would I buy this again? Yes. I would absolutely buy Trader Joe's Creamy Chicken and Poblano Ravioli again.

Neapolitan. The classic pairing of vanilla, strawberry, and chocolate. We first saw this recently with the seasonally available Neapolitan Joe Joe's. Now we are seeing it in Trader Joe's Neapolitan Puffs Cereal. Soon, we will revisit this combination where it all started: in ice cream but with Joe Joe's. Yup, they seem to be capitalizing on that varieties success.

Taste and review

Now, besides the flavor, this is kosher, gluten-free, and while not labeled as such, a quick glance through the ingredients appears to be vegan.

There are a few places I don't go too often at Trader Joe's. The cereal aisle. I have a love/hate relationship with cereal. I like it in small doses. And it better be special tasting.

I'm a fan of Special K with Red Berries. And growing up, Reeses Puffs were my go to choice. Otherwise, most cereals don't excite me one bit.

To be honest, I was excited about the flavor combination. But when you read the "made with beans and rice" bit, it doesn't sound quite as appealing. Sounds more like something that should be served with some enchilada sauce. But I'll pretty much try anything once.

So, I opened the bag and popped a few in my mouth. They were crispy and had a nice sheen. If ingredients weren't listed, I would not have guessed this was gluten-free.

Big score in my book.

After having the handful, I started having clusters of the same flavor. The vanilla puffs were pleasantly vanilla.

The strawberry puffs are decently strawberry, but upon closer examination, this is due to the coating. Bite into one and they have the same vanilla-looking interior. What they have done here, is use freeze-dried strawberries, to add intense strawberry flavoring. I just wish they had done that all the way through, as freeze-dried strawberries are excellent to bake with or blend into a powder.

The chocolate puffs are sufficiently chocolatey. I do wish they used cacao powder in place of cocoa powder to up the intensity. But not a deal-breaker as one flavor here shouldn't dominate.

Overall

For $3.69 this is still cheaper than many grocery store kinds of cereal of the same size.

Would I buy this again? I might buy Trader Joe's Neapolitan Puffs Cereal again. While I'm not a huge cereal fan, I did enjoy munching on this.

Cadillac Margarita

This top-shelf Cadillac Margarita uses premium ingredients of tequila and orange liqueur to ensure a top-shelf margarita. This recipe is ready in 5 minutes or less and is perfect for Cinco de Mayo, National Margarita Day (February 22nd), or just a day when you need a classic yet high-end drink, but don't want to go out.

I love a good cocktail. However, when you live near certain areas (like NYC), going out and drinking anything but beer is potentially quite expensive. On the island of Manhattan, there are a number of establishments where the average cocktail will set you back nearly $20.

In my cheap mind, I can invest in a decent home bar for that price. So with a couple of investments and knowing a few good tips about home bartending, you can save yourself a bundle. A basic margarita recipe only requires that you know how to shake a drink. Now, this isn't a basic margarita recipe. This is a "Cadillac Margarita" or a "Top Shelf Margarita." In other words, there are certain higher-end substitutions made, to make this an upgrade from the original recipe.

What makes this recipe different?

A margarita is a simple cocktail using lime, tequila, and triple sec. A Cadillac Margarita elevates the original recipe and uses aged tequila like a reposado in place of silver tequila and Grand Marnier in place of the triple sec.

Who invented this drink?

Food history is always a bit fuzzy as to who gets the credit. However, the name is a reference to the car company when Cadillacs were top of the line and highly desirable to customers. Those old school Cadillacs stood out and everyone knew what it was. This cocktail stands apart from a standard margarita as the richly hued tequila and Grand Marnier makes it very clear that premium ingredients are at work here.

Types of tequila

In order for Tequila to be called Tequila it must be made in the Jalisco region of Mexico. It must also be made from the blue agave plant. If you are in the US, it also needs to be at least 80 proof (or 40% alcohol). Now, some of us have had some bad tequila memories. A lot of cheap tequila is only 51% blue agave. The good stuff should be made from 100% agave. That should be clearly listed on the bottle as well.

When you go to the store to buy Tequila you might notice several different varieties of tequila. Most visibly, you'll notice the different colors of tequila. Each one of these has a more subtle nuanced characteristic to them.

Silver (blanco) Tequila- This tequila is clear and unaged. The flavor here is a bit more true to the flavor of agave from which it is distilled. Tequila that is aged is usually done so in a barrel leading to other flavors and nuances being present. Since this is not aged, it retains its clear and pure flavor.

Reposado- This tequila is a golden color since it is rested in barrels between 2-12 months. Oak barrels are commonly used to age tequila. Some tequilas even use used Bourbon Barrels, Sherry Casks, or other types of oak barrels to add more complex flavors like vanilla, oak, chocolate, coffee, and whiskey. You'll have to try different ones to find the nuances to these.

Joven (gold)- A mix of Blanco and Reposado tequilas. This mix might contain less than 100% blue agave and is a mixto. My advice: stick with 100% blue agave tequila. It makes a difference.

Anejo- Aged 1-3 years in a barrel. Way less agave and tastes more like the barrel it is aged in.

Extra Anejo- Aged 3 years or more.

Which tequila brand is best? The one that pleases your palate the most. Some liquor stores do occasionally have tastings and samplings.

What's the difference between curacao, triple sec, Grand Marnier, and Cointreau?

So all of the above are orange liqueurs. However, there are some differences between the orange liqueurs you might see on shelves.

Curacao-Originally made in the island that bears this products name. This is made from brandy and orange peels. Unlike Tequila, Champagne, and Bourbon, this does not have to be made on the island of Curacao. This is a clear liquid. Also, the blue drink is not a traditional curacao regardless of how fun it is to add to a drink.

Triple Sec-started off as a French product, however, it is more dry than a Curacao, thus the word "sec" in French. The triple part is just marketing as it does not have to be distilled three times to bear the name. This is also clear in color.

Grand Marnier & Cointreau- Grand Marnier is made from a blend of cognac and triple sec. It is an amber orange color. Cointreau was initially called "Cointreau Triple Sec", however in order to differentiate itself in the marketplace it dropped the Triple Sec from its name. Cointreau is clear.

Tips for making this

  • Use quality 100% blue agave tequila. For this recipe, silver or reposado tequila work best as they have a more agave flavor.
  • Use good quality ice. If your water tastes weird, it will taint the cocktail. Use bottled water to make ice or buy ice. This is a vastly undervalued item when it comes to making a great cocktail.
  • Be sure that when you salt the rim, you avoid getting salt inside the glass. Otherwise, your drink will taste like the ocean.
  • Avoid sweet/sour mixes and pre-made margarita mixes. Nothing can be more simple than freshly squeezed limes. Simple syrup is also easy enough to make.
  • Don't use bottled lime juice. It completely throws off the balance of a good drink.
  • When shaken, the shaker should feel ice-cold throughout. If it isn't cold, keep going. I've never had a great room temperature cocktail.
  • Grand Marnier can be served as a separate shot or poured on top right before serving.
  • This margarita will be a deeper color than a regular margarita due to the color variation in the ingredients.

Directions

Step 1: (optional) Using a lime wedge, rub the lime around the edge of the margarita glass. Then run the outside of the glass with coarse salt. If you want only the taste of salt but don't want those big chunks in your mouth consider using agave instead of the lime wedge. Set aside.

Here is how the glasses might look different when you chose to rim the glass with lime or with syrup. With lime the salt will come off much easier. Kosher salt or other coarse salt work well.

Step 2: Fill a cocktail shaker and fill with ice. Add premium tequila, 1 ounce of Grand Marnier, fresh lime juice, simple syrup and shake vigorously until the shaker feels very cold.

Step 3: Fill the glass that you rimmed earlier with good quality ice. Attach strainer and pour margarita into glass.

Step 4b: Pour a shot of Grand Marnier on top of the margarita on the rocks. You can also "float it" using a spoon. Or enjoy as a shot and serve Enjoy responsibly! If you float the Grand Marnier, it will eventually settle toward the bottom as it is denser than the rest of the drink.

Ingredients

Optional- For the Glass

  • Kosher Salt for garnish
  • Lime Wheel for garnish

For the Margarita

  • 2 ounces Tequila Use good quality tequila. I used reposado tequila
  • 1 ounce Grand Marnier Cointreau, Grand Gala or other Orange Liqueur can be used as well.
  • 1.5 ounces lime juice freshly squeezed
  • .5 ounce simple syrup or to taste
  • Ice Use good quality ice
  • 1 ounce Grand Marnier as a shot or to pour on top.

Kitchen Equipment Needed to Make This Recipe

  • Juicer
  • Shaker
  • Cocktail Glass

Instructions

  • (Optional) Rim the outside edge of a glass with a lime wedge. Dip glass's edge into a kosher salt to create a salt time. Remove excess from the interior of the glass to prevent drink from becoming salty
  • Fill Cocktail Shaker with Ice. 
  • Add tequila, 1 ounce Grand Marnier, lime juice, and simple syrup.
  • Shake vigorously until shaker is very cold.
  • Add ice to your (optionally) rimmed glass. Strain and pour into glass.
  • Add extra 1 ounce of Grand Marnier on top of your cocktail or enjoy as a shot on the side.

Notes

  • Use quality 100% blue agave tequila. In this application silver or reposado tequila work best as they taste more of agave and less oaky than an anejo tequila.
  • Use good quality ice. If your water is off tasting, it will taint the cocktail. Use bottled water to make ice or buy ice. This is vastly undervalued item when it comes to making a great cocktail.
  • Be sure that when you salt the rim, you avoid getting salt inside the glass. Otherwise your drink will taste more like the ocean.
  • Avoid sweet/sour mixes and pre-made margarita mixes. Nothing can be simple than freshly squeezed limes. Simple syrup is easy enough to make.
  • When shaken, the shaker should feel ice cold throughout. If it isn't cold, keep going. I've never had a great room temperature cocktail.
  • Grand Marnier can be served in as a separate shot or poured on top right before serving.
  • This margarita will be a deeper color than a regular margarita due to the color variation in the ingredients.
