Crumb Cake

Here is a recipe straight from my Mom's cookbook. This Crumb Cake recipe is super simple but always impresses whoever tries it. This recipe features lots and lots of that amazing cinnamon-spiced crumb topping that wows every time. Perfect for entertaining and sharing.

My earliest food memories are absolutely at home. And they totally revolve around cake. Cake was one of those early cooking lessons where a kid could help out without running too much of the risk of getting injured.

Odds are I probably made a mess, but it beats playing with the stove. So the cake was one of those things that were always around the house. Not that we ate them all.

Nope, much of this was for sharing. Now, we kept things simple in our household. The boxed cake mix was the way to go. I'm pretty sure my mom (or a lot of people's Mom's) was the Cake Doctor before that was a cookbook series. This recipe utilizes 1 box of yellow cake mix with a delicious cinnamon crumb topping.

In fact, this recipe was given to my Mom by my Godmother. So the origins of this recipe might require a 23 and Me Test to figure out. However, I do assure you this is from a now thoroughly aged and well-loved page from her cookbook.

So, no disrespect to bakers out there who love cake from scratch. But there is something so unusually delicious about boxed cake mix that can't be replicated at home. Find a boxed mix you like and this is a great modification.

What's the difference between coffee cake and crumb cake?

So there are certain words and phrases that seem to be used interchangeably like stock and broth, frosting and icing, and somehow coffee cake and crumb cake.

A coffee cake can refer to anything that is meant to be enjoyed with coffee. It may have a crumb topping, streusel topping, or no topping at all. A crumb cake specifically refers to a cake with crumbs. Lots of them.

There is also a bit of dialect involved here as well. For example, if you are in New York (like me) and ask for a coffee cake then expect a slice of crumb cake, which has just about as many crumbs as cake. In this region, we are referring to the same thing. However, the NY Times put up a great linguistic quiz to show how much language varies. While crumb cake isn't on the list, items like Pop or Soda do make the list.

Suggestions for modifying this

As a home cook and blogger, a recipe should be a starting point. I believe that your taste buds are different from mine. So here is my completely incomplete list of pairings that should work if you wish to modify the original recipe.

Here at Become Betty, one of my main objectives was always to inspire you, the reader, to be more creative in the kitchen. Consider these my Betty Twist, an easy and inspiring list to help you get more daring and creative. These flavor suggestions all pair well with either cake or the crumb topping.

If you wish to modify the cake you could easily add in apple, banana, blueberry, cherries, cranberries, lemon or orange peel, peach, and strawberries or nuts. With any fresh fruit, be sure to store it in the refrigerator after cooling from the oven.

If you wish to modify the topping you can easily add or switch out the cinnamon with cardamom, cloves, ginger, mace, nutmeg, and cloves. Those spices all vary in potency. So you'll want to only add a little bit to make sure it doesn't overpower the rest of the cake. Start with substituting ½ teaspoon of the cinnamon for a different spice as a starting point.

If you wish to add a glaze on top of the decadent topping then consider amaretto, brandy, cognac, kirsch, Grand Marnier, a berry, or orange liqueur. Use ¼ cup of 10x sugar with 1 tablespoon of the liqueur. Taste before adding. If it is too strong add a very small amount of water to thin it out. And yes, powdered sugar adds a beautiful layer of sweetness as well.

Tips for making this

  • Boxed cake mixes yield reliable results, but please avoid the boxes that use butter in the mix.
  • If you don't like as many crumbs as you see here, the recipe can easily be cut in half.
  • If you feel fancy or want to make an even better presentation sprinkle to stop with some 10x sugar or make a glaze to drizzle on top.

Directions

Step 1: Preheat the oven. Make cake according to the instructions on the box.

Step 2: In a food processor combine flour, butter, sugar, vanilla, and cinnamon. Combine until a crumb topping forms.

Step 3: Wait for the cake to be cooked through. Add to the top of the hot cake and return to the oven for 10-12 minutes.

Step 4: Remove from oven and allow to cool. Slice and enjoy....or go to step 5 (optional)

Step 5: (Optional) If you want yours to look extra fancy, add a dusting of powdered sugar to the top. Slice, share, enjoy!

Ingredients

For the Cake

  • 1 box yellow cake mix made per the instructions on the box

The Crumbs

  • 2 cups flour
  • 2 sticks butter
  • â…” cup sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoon ground cinnamon

Optional

  • 2 tablespoon 10x Confectioners Sugar

Kitchen Equipment Needed to Make This Recipe

  • Baking Pan
  • Mixer
  • Food Processor

Instructions

  • Preheat oven to 350F
  • Make your favorite yellow cake mix according to the directions on the box. Bake as per the directions on the box.
  • While waiting for cake to cook, combine flour, butter, sugar, vanilla, and cinnamon in a food processor. Pulse until begins to look like crumbs.
  • When cake is fully cooked, add crumbs to the top of the cake and return to oven and bake for 10-12 minutes.
  • Remove from oven and allow to cool.
  • Slice and enjoy! This is great recipe to bring to a gathering or any place where it will be shared. Optional 10x sugar can be dusted on before serving.

  • Avoid mixes that use butter in the mix. It doesn't seem to work well with this recipe
  • You'll still need to add the ingredients needed to make the cake.
  • Calorie count only takes the crumb mixture + boxed cake mix into account.

Vegan cookie review part deux. I figured these cookies need separate reviews. This cookie right here has certain similarities to the lemon variety like the fact it's vegan, the cookies are huge, and they are new to shelves. However, the taste on these are quite different.

Taste

If you are a fan of crisp cookies, these might not be for you. These cookies are thick, chewy, dense, and quite rich.

I want you to imagine an Oreo and a brownie had a baby. You would have something similar to these.

Except that brownie has some chocolate chips added in for extra texture and chocolate flavor.

So if your heart, hips, thighs, or soul is craving something crisp, it isn't here. If you want rich and satisfying without needing to eat the whole bag, then these should be worth a try.

When the cashier told me these were her favorite out of the two, I was surprised. I tried both and I understood.

Now, both are vegan and I know I didn't make any point to go into any depth about that. But here, as a non-vegan, I didn't feel like anything was missing.

Nor did my husband who tried these too. I didn't mention it to him.

While these didn't disappear quite as fast as the lemon cookies, it was the rich chocolate that slowed both of us down.

Overall

These are more expensive than a box of cookies on the shelf at $4.29. Keep in mind that the price is for four very large cookie sandwiches. I found half of one to be more than sufficiently satisfying.

Trader Joe's Lemon Creme Sandwich Cookies

Consider this a brief lemon theme between these cookies and a recent review of a candle. But on my most recent shopping trip, there were a few new items hiding in the fresh bread and desserts aisle. In my local store, that happens to be right when I walk in. So grabbed both and hoped for the best. The other variety is a brownie cookie, but that will have to wait for a different review.

Now, right off the bat, I'll tell you these are more expensive than a lot of boxed cookies. These are $4.29 for the four cookie sandwiches that you see in the bag. However, these are huge. How big? About the size of my palm.

Taste

That wasn't the only thing that struck me either. Each cookie sandwich is technically 2 servings. So you've been warned.

Now the cashier told me that she had sampled them earlier in the weekend. They do arrive at the stores frozen. So the staff had gotten to try some fresh and chilled cookies. She told me she liked the brownie ones better.

So, I figured I would set the bar low and start with these. And honestly, they weren't bad if you like a certain type of cookie.

This cookie is not for you if you like a crisp crunch of a cookie. You'll also be disappointed in this if you are expecting an in-your-face lemon flavor.

It's not here. If you like either one of those cookies then pick up Trader Joe's Meyer Lemon Cookie Thins which are a boxed variety instead. Those were crisp and very lemony.

These are chewy, thick cookies. They are on the soft side. But I found half a cookie to be satisfying.

My husband on the other hand did not find one satisfying. I wrapped up the other three and they vanished in a day. He even commented, "You haven't made these in a while."

"I didn't make these."

"Oh, they're just like the ones you used to make." I'll take the compliment when I get them.

Overall

Regardless, they are good. Not a must-try item, but if you have a sweet tooth they are a good one to try. My husband approves of these, I was wishing for a bit more lemon flavor and a much smaller cookie (not words that come out of my mouth often). Otherwise, despite the slightly pricey cost per cookie, they weren't bad.

I enjoyed the one I had.

Would I buy this again? I liked them, but my husband polished off everyone in the bag. They were a hit with him.

Trader Joe's Rose Oil Ultra Moisturizing Hand Cream

So, it's that time of year where certain rose themed items are making their way back on to store shelves. Now, the popular Rose Facial Toner is available all year-long. However, there were two rose themed items that come and go: this and Rose Facial Oil. And while I haven't seen the facial oil back yet, I wouldn't be surprised if it does show up again in the near future (fingers crossed).

Testing and review

On my last trip, I noticed a few items that quietly returned to shelves. My local store snuck the Lemon Cookie Candle right into the health and beauty aisle without the usual pomp and circumstance of finding it on the "New Items" shelf.

Now, some people have asked me, "How do you know what is seasonal?"

Well, I look at the artwork on the price tag.

In my local stores (yes, I am lucky enough to have 3 stores within 20 minutes), take a good look at the price tag. While it isn't 100% foolproof, it gives a good hint.

This item appeared last year and disappeared. Now, the price tag has Valentine's Day theme tag, while the rest of the aisle has more mundane tags.

But back to this product. What you have here is a generously sized 3-ounce tube of really, really moisturizing hand cream. If you apply this during the day and take a shower later, your hands will still be moist. The second ingredient is shea butter. A dab will cover your hands.

The packaging is nice too. I would make a really nice gift for someone in your life.

And while this isn't neutral in aroma, it does have a light pleasant rose aroma to it. It is labeled that this item is not tested on animals. And is reasonably priced.

Overall

Now for the bad part, again, this is a seasonal item. There was a limited run of a Ginger variety of hand cream and there was even a trio of hand creams sold around the holidays. So if you love it, stock up.

For $4.99 it's reasonably priced for its size.

And if you missed the season for this item, then you might be able to find it through third-party sellers on Amazon.

Would I buy this again? Yes, I would buy Trader Joe's Rose Oil Ultra Moisturizing Hand Cream again.

Trader Joe's Lemon Cookie Scented Candle

I swung back into the health and beauty aisle this week and what did I find? A new candle. Now, I haven't reviewed candles in the past. Mainly because they are usually limited-run scents. In the past couple of months, I've bought Cedar Balsam, Pumpkin Vanilla, Gingerbread, as well as Honey Crisp Apple. What did I learn from buying them? I wished I had picked up a few more.

Testing this

Now, I love a good candle or anything that makes the house smell nice.

At Trader Joe's these aren't sealed. So sniff away.

What you smell is pretty much what you get. This is a smaller candle, but it isn't tiny either.

The smell here is more cookie than lemon. So there is that vanilla-ish aroma to this.

Nothing I didn't enjoy.

But there has been one thing I don't enjoy about candles that I think should be brought up.

Review

I hate the fact that I burn through the wick, but I know that there is still some aroma left. This isn't an item unique to Trader Joe's either.

It doesn't matter if it is Bath and Body Works or some candle I bought in a random shop. If I purchase a candle, I'm not totally satisfied to let it go until every ounce of fragrance has been outed from the wax.

If you have the same struggle that I do, I highly recommend buying an electric candle warmer. Why? Well once the wick is gone, you are kind of stuck.

Yes, stores will sell you candle warmers, but it always seems that you suddenly need a different wax refill anyway. Plus, if you work in a place where a flame isn't allowed, you can eliminate any need for plug-in air fresheners which too require different refills.

For me, that's been a pretty good solution to a problem I know I'm not alone in. At least when I toss my candles, I know that they have truly given me their all.

This item is worth a try, just keep in mind it is less lemon and more cookie in the aroma. If I see more, I may pick them up. However, those Honey Crisp Apple candles were hands down my favorite but were a limited-run Fall variety.

For $3.99 these are reasonably priced as well.

My issue with the last few candles I've bought. Please note this is my leftover Gingerbread candle:

See how much wax is left? It still has that aroma. This one is coming with me next to go to work and freshen the place up. Having an electric candle warmer allows this to be an air freshener when the wick has nothing left to give.
